Jamie’s meatballs!!

 

I have just cooked Jamie Oliver’s meatball’s from his Jamie at Home book and they were divine. I love Jamie’s recipes, he makes them easy to understand and follow, a must for me, especially if I’m having a blonde day LoL!! :)

I use wholewheat spaggetti with a low gi and longer lasting energy, good to keep oh full and for me to have energy for longer dog walks!!

Quick sausage meatballs with tomato and basil sauce, spaghetti and sweet raw peas.

olive oil
8 pork sausages ( I always use tesco cumberland sausages with 70% meat or similar)
500g spaghetti
300g fresh peas
Parmesan cheese
fresh marjoram, thyme or rosemary

For the Sauce

olive oil
2 cloves garlic
1 bunch fresh basil
2 tins plum tomatoes
sea salt
pepper
balsamic vinegar.

heat oil in saucepan. skin the sausages and make little meat balls (3 balls from each one).Put in pan and fry until golden brown.

Meanwhile cook spaghetti according to instructions on packet.

In a separate pan heat some oil and add the garlic and basil. Saving a few leaves for later. Add tomatoes and season. Bring to simmer and break up the tomatoes and add a swig of balsamic vinegar.

Add the herbs to the pan of sausages, cook for about 30 seconds. Drain spaghetti and divide between four plates place the meat balls on top. Spoon over the sauce, sprinkle with basil leaves and Parmesan. serve with a handful of fresh peas

PS, I Love U

Woke up to downpours this morning in North Yorkshire!! The rain and grey skies match my mood, I have to go back to work tommorow, so feeling a bit crabbit, as wendy would say, from ‘a wee bit of cooking’!

It was such a lovely sunny day yesterday and now this!! The only good thing is that the plants I have just planted will have a good drink.

Oh has declared it a ‘bed day’ and has installed a new speaker system for our bedroom tv, I have ‘PS I love u’ to watch later in bed.   Really looking forward to getting snugged up with dog, pink blankie and of course oh:)

 I have read the Celcia Ahern book and it will be interesting to see if the film is anything like the book!!???  I always thought that Holly, the main part in the book was from English or Irish, but in the film she is Amercian!

I have got a new book to read, its number two in the Judy and Richard book club,’ Random Acts of Heroic Love’
